Here is one of my favorite low carb deserts. Sort of like a peach pie. No baking required.
The crust is a combination of Almond flour, Swirl, (a natural sugar substitute). butter and Pumpkin pie spices. I will have to give the proportions a bit later.
2 c almond flour
2/3 cup Swerve, granulated, or Erythritol
1/3 cup melted butter
1/2 tsp ground ginger
3/4 tsp ground nutmeg
3/4 tsp ground cinnamon
1/4 tsp ground cloves
(All of the above spices can be replaces with 2 t0 3 tsp of Pumpkin Pie Spice)
1/4 tsp salt
Mix all ingredients in bowl. Add: 1/3 cup melted butter; drizzle through dough as you mix; will form thick dough. Press into pie plate for crust and freeze for 15 minutes (or refrigerate for 1 hour), then pour in filling desired.
The peach stuff inside. Sugar free peach jello, Sugar free Peach Mango drink mix, 3 eggs, 1 package of cream cheese.
1 small box Peach jello
2 Packet of Peach mango Drink mix (each for 16 oz of water size)
3 large eggs
1 8 oz package of cream cheese.
1 can of sliced peaches (optional)
mix thoroughly 2 cups of water with the eggs and drink mix, put in the microwave and boil, stirring every few minutes to keep the eggs from separating. sir in the jello and let sit while you soften the cream cheese with the microwave about 1 minute. Combine the cream cheese and jello mix until there is no more cream cheese lumps showing up. (I use a mixer, but you can do it by hand). Pour into the pie crust and put into the refrigerator. If you like the peaches added, let the mixture cool and become a little firm, then add the drained peaches and mix just before putting this into the pie crust.
This filling is a good substitute for ice cream too. Sandy likes it with lime jello and Real lime drink packets for a key lime pie taste.
